The decorative fender trim pieces on trailers usually does not hamper use of the Tailgater Tire Table part # TT54FR. That said, it does require a bit more caution when installing and removing to ensure the trim is not damaged. I wanted to check the Phoenix Faucet # PF213321 for knob directions, but that particular item is out of stock. Instead I checked # PF213324 which is very similar with brass on the inside and found that both knobs have a counter clockwise arrow on the knobs - presumbably to indicate on. Plus, the printed directions say the same.

The reason the weight capacity of all the 15" rims you were looking at stops at 2150lbs has to do with the bolt pattern. If you take a look at a higher bolt pattern like 6 on 5-1/2 you'll see the capacity increases because the weight can be distributed between more studs.
Bolt patterns don't affect the fitment of the tire on the wheel rim so they could be used for both patterns and would need to be rated higher to match that higher rated wheel rim.
